The goal is to achieve the "perfect canvas", which means the smoothest and silkiest milk, referred to as microfoam.
I. Preparation and Setup
1. Choose the Milk: The ideal milk is the coldest milk possible.
2. Fill the Pitcher: Fill your pitcher no more than two-thirds to ensure there is enough space for the milk to expand.
3. Clear the Steamer: Be sure to clear the steamer of any water before and after use.
II. Steaming and Frothing (Creating Microfoam)
1. Position the Wand: Submerge the steamer wand at an angle a couple of centimeters under the milk and away from the edge.
2. Start the Steam: Turn the steam on and immediately begin to create a whirlpool with the milk.
3. Aerate (Stretch the Milk): Listen for the aeration, which should sound like a crackle. This part is crucial, as aeration occurs only during the beginning of frothing and may only last a few seconds as the milk stretches and expands.
4. Keep Spinning: Keep your hand steady and focus on keeping the milk spinning in a whirlpool until the milk is heated.
5. Check Temperature: You will know when to stop when the pitcher is too hot to touch longer than a couple of seconds.
III. Finishing the Canvas (Pouring)
1. Incorporate Milk and Froth: Take the freshly steamed milk and swirl strongly to keep the milk and froth incorporated.
Here is a step-by-step walkthrough drawing directly from the instructions:
1. Prepare the Pitcher: Grab your pitcher.
2. Swirl the Milk: Swirl your milk.
3. Remove Air Bubbles: Tap out bubbles.
4. Pour the Canvas: Pour from The Edge to create a perfectly silky smooth canvas.
The resulting microfoam is what makes the surface perfect for printing ripples on your coffee.
